The former causes quite high CPU load wherever you have to pull things around, probably because the redraw is tied to mouse movement and the touchscreen produces a lot of events per second. The latter works quite nicely, thanks to 128MB RAM.
No. I suspect that the 266MHz S3C2410 CPU is much too slow to support an agreeable frame rate, especially in VGA mode. And it wouldn't be much fun to control with only a touchscreen.
